Brown Rice in the Pressure Cooker

It's more than a little embarrassing to call this a recipe.  It's not.  It's an example, probably example 5,983 of why I love LOVE my Nesco Electric Pressure Cooker.

*I know a bunch of you have gone out and bought the same one, tell Nesco, would you? :) 

Back to the rice.  I love brown rice.  I hate the 45 minute plus resting time and messing with aspect of it.  I've cooked it on the stove top.  I've cooked it in the oven.  I've combined.  

There's no rice I care enough about to have it give me more than 10 seconds worth of thought. 

Hello Pressure Cooker, baby! I do my white rice in it, I do my brown rice in it.

Here's how I do it,  it works every.single.time.  If you don't have an electric pressure cooker, go get one, buy some brown rice and come home and do this.  No fuss, no muss, and you end up with a big bowl of brown rice to eat, fry, save, freeze, cook with, snack on, make salad, sides or main dishes with.  I'll do a segment on some of those recipes but in the interim, may I present

Tracy's Pressure Cooker Brown Rice

1 1/2 cups brown rice
2 1/4 cups liquid of your choice, water, stock, coconut milk (!) or any combination thereof
a pinch of salt

That's it.  Dump it all in.

Lock and load, high pressure, 18 minutes.  

Go have a glass of wine, answer email or go to the store. If you're not there when the timer goes off, no problem, the thing sets to WARM and waits happily for you to return. 

When the timer goes off, quick release open and fluff with a fork or a rice paddle. (look how chef-y I am with my own rice paddle.  I think someone gave it to me as a gift.  Trust me, a fork works fine :).  

Then, turn the cooker off and cover it with a tea towel.  Leave for as long as you want, at least 5 minutes to help dry the rice out a little bit. 

Fluff and eat, store, freeze, refrigerate, snack upon.  Yeah, crazy easy and perfect.  every.single.time.  I promise
