THIS is my single, small, white loaf of sandwich or anything you want, bread. It is easy, you don't need a machine, trust me, you can do it, I know.

  
 

Single, small, white bread loaf, this makes one, it is easy, you can do it, trust me, I'm the queen :)


The whole method and video is on youtube, BUT the recipe is so easy...

In the bowl of a kitchen mixer (or by hand, you don't need a machine for this) dump it all

RECIPE
1 1/2 cups all purpose flour
1 tsp salt
1 tsp sugar
1 heaped tsp yeast
1 heaped tsp shortening
water to form a soft dough.

Mix to a soft, slightly sticky dough, form a ball, cover and rise 1 hour
Form to loaf, in greased pan, 45 mins or until double
BAKE in pre-heated 375 oven for 20 mins, spin and cook another 2

REMOVE to rack and cool before you dive in and and eat it all

White Bread, A Pictorial Journey

It's bread, it's the stuff of life.

I'll admit, I do this well.  It's easy, it's tasty, it's CHEAP and it's fresh and it's infinitely better than any $7 "artisan" loaf you'll buy.

I make this loaf every few days.  More often when Connor was in school but since he's been home schooled, we don't eat so many sandwiches mid day, hopefully that'll change, full kitchen duty 3 times a day, although fun, isn't necessarily the way I saw my day being spent.  I have, apparently, turned into a diner.

That being said, I have been asked many times for the play by play of the daily white bread.  I may have done it before, here and on other sites, but here's a new one. 

 I use 3 cups of a/p flour for this.  You can substitute up to 3/4 cup whole wheat, much more and it gets a bit stodgy and you have to futz with the liquid levels so really, just use another recipe. 


TRACYS BORING OLD (delicious) WHITE LOAF

This is my tried, true and I make it in my sleep bread.  I only ever make it in the Kitchen-aid.  I CAN make it by hand, I just don't want to :)

COMBINE and allow to bloom: 
1 cup milk, body temperature
2 Tablespoons melted butter
2 Tablespoons vegetable oil
2 tsp sugar
2 tsp yeast

ADD, MIX to beautiful soft dough.
1 1/2 tsp kosher salt
1 egg
3 cups a/p flour (or a/p whole wheat blend)

RISE till doubled

DEFLATE, SHAPE, put in loaf pan, RISE till doubled

BAKE 375, 25 minutes

REMOVE from pan, leave to cool on rack

Yeast blooms in about 3 minutes.  The first rise is about 1 hour, second is the same. I beat the heck out of the dough for 5 minutes from when it starts to come together.  IF it's too sticky, like this day, add a little flour just to keep it off the sides. Sometimes it sticks, that's fine.  

I put the plastic container, with lid, in my oven with the light on purely to keep it off the counter.  My house is full of yeast in the air and things tend to rise faster now ???  so here, the rises are each about 45 minutes.

White Bread, my Daily Bread

 

I've had loads and loads of people ask about the white bread loaf I make.  I've passed the recipe along but here is the pictures, the play by play.

In the bowl of your kitchenaid 
1 cup of warm milk, 1 T sugar, 2 T melted butter, 2 T vegetable oil, 2 1/4 tsp yeast.  Mix and leave it there to come to life!

 

ADD 1 egg, 1 1/2 tsp salt, 3 cups flour.
MIX slowly with dough hook to combine

 

This looks a little sticky so I shake in 1/4 cup of flour

CRANK up to high and let it go for 5 minutes
 

After 5 minutes, it's soft and has cleared the bottom of the bowl!


Put on lightly floured surface and flatten it, knead it a couple of times and turn it into a ball
  

I put a dollop of room temperature butter on the top of the ball, smear it around with my hands then gently roll and and pull the dough ball under itself which distributes the butter all the way around. Roll it around in your hand creating a smooth surface and it'll feel lovely and happy.

I put it in a plastic container to rise, these don't need to be greased at all, pop a lid on and I put in the oven with the light on for 60 minutes.
 

After 1 hour, look how HAPPY it is!!  It's easily tripled.   THANK you, bread dough, you DO love me!


On a lightly floured board, dump it out (the corners make me giggle).  Flatten it with your hands, fingertips actually then fold it into 3rds
  

Fold the top third down and the bottom third up.  Then turn it 90 degrees.
  

Flatten it a bit then roll from the bottom, tightly, (keep the edges even!) and seal the edge over.  Pinch it hard!
  

I roll it lightly in flour and put it, seam side down, in a greased loaf tin.  Sorry mine is really grotty but I love the bread this makes and the shape is right.
 

In the oven with the light on with a dry towel, for 45 minutes, then peek.
 

OH HAPPY risen bread!!


Pop it into a preheated 375 oven for 25 minutes. If your oven isn't completely even, spin it at 20 minutes.

Remove from oven.  *LOOK HOW BEAUTIFUL THIS IS!* and remove from pan immediately and leave to cool.
 

THAT is how I make my daily bread, every 3rd day or so.  I hope you make it, I hope you love it, I hope you show me how yours comes out!

(You CAN substitute 1/2 cup of whole wheat flour for a/p if you feel but do not substitute a higher percentage!!)
